Those who know me know I’m obsessed with eggs—they even buy more when I come to stay because I eat so many. My staple weekday breakfast for the last few months has been scrambled tofu and eggs with a sprinkling of flaxseeds and soy sauce, but it’s starting to get boring and I’ve been looking for a high-protein alternative.
